The Seattle Ultrasonics C-200 Chef’s Knife blends traditional blade craftsmanship with high-frequency ultrasonic vibration to deliver cleaner, faster, and more precise cuts. At first glance, the C-200 resembles a sleek, high-end chef’s knife with a full-tang stainless steel body and ergonomic grip. But inside the handle lies its defining feature: PZT-8 piezoelectric ceramic crystals that vibrate the blade edge at ultrasonic frequency (over 40,000 times a second). This vibration reduces friction between the blade and the food, allowing it to glide through meats, vegetables, and even soft cheeses with minimal resistance.
The result is tomato slices without bruising, sushi-grade fish portions cleanly cut without tearing, and layered pastries hold their structure. The ultrasonic action also minimizes sticking, so butter and starchy foods like potatoes or sticky rice don’t cling to the blade.
